Almond Honey Milk

Ingredients:
Blanched almonds 1/2 cup
Milk 2 cups
Cardamom powder or vanilla 1/2 tsp
honey or sugar to taste
Directions:
·  Add almonds and water in a blender or food processor fitted with the metal blade and process for 2-3 minutes or until the nuts are reduced to a fine puree. Add 2 cups of milk and further blend on low speed for about 15 seconds. Heat the milk blend to a boil.
·  Pour the mixture through a strainer over a pan. Press out as much liquid as possible, then add the cardamom seeds. Stirring constantly, bring to a near boil over moderately high heat. Reduce the heat to low and simmer for 2 minutes. Add the sweetener.


Banana Honey Delight
Ingredients
Banana 1 ripe
Milk 1 1/2 cup
Lemon Juice 1 tbsp
Honey 2 1/2 tbsp
Raisins 2 tbsp
Cinnamon 1/4 tbsp
Directions

1. This drink should be made just before serving.
2. Mix all contents in a blender and blend till it turns into a fine paste.
3. Serve immediately with a sprinkle of cinnamon powder on top.

Cardamom Milk
Ingredients:

White poppy seeds dry roasted in a pan 3 tbsp
Blanched almonds 15
Water 1 cup
Whole milk 3 cups
Poppy Seeds 1 tbsp
Cardamom seeds 1/2 tsp
Sugar to taste
Directions:
·  Dry roast poppy seeds in a heavy frying pan over low heat. stiring the pan often so as not to burn it, for about 5 minutes. Combine the poppy seeds, almonds and water in a blender or food processor fitted with the metal blade and process for 2-3 minutes or until the nuts are reduced to a fine puree. Add 2 cups milk and further blend on low speed for about 15 seconds.
·  Pour the mixture through a strainer over a pan. Press out as much liquid as possible, then add the remaining milk and the cardomom seeds. Stirring constantly, bring to a boil over moderately high heat. Reduce the heat to low and simmer for 2 minutes. Add the sweetner.

Chaas
Ingredients:

Chilled curd/yogurt 100 gms
Black salt pinch
Roasted cumin powder a pinch
Salt as per taste.

Directions:
·  Churn the Curd/Yogurt till it becomes smooth and dropping consistency.
·  Pour in 1½ cup of water and mix till blended.
·  Add the salt and black salt.

Cold Coffee
Ingredients:

Cold milk 4 cups
Cream 4 tbsp
Boiling water 1 cup
Sugar 3 tbsp
Ice cubes 2 cups
Instant coffee powder 6 tsp
Directions:
·  Dissolve instant coffee powder and sugar in boiling water. Cool it.
·  Whip coffee mixture and cold milk in a blender for 40 seconds.
·  Add ice cubes, cream and whip for another 30 seconds or till it becomes very fluffy.

Dry Ginger Drink
Ingredients:

Dry Ginger 30 gms
Sugar 4 tsp
Coriander seeds 10 gms

Directions:
·  Heat about 4 glasses of water , then add the dry ginger , coriander seeds , sugar .

Fruit punch
Ingredients:

Sugar 4 cups
Pineapple juice 1 cup
Oranges, peeled& flaked 3 nos.
Lemon juice 3 nos.
Cherries 1 tin
Pineapple slices, crushed 1 tin
Directions:
·  Boil sugar in 2 cups water for 10 minutes.
·  Cool and blend all the remaining ingredients well.

Iced Tea
Ingredients:

Water 3 quarts
Tea bags 8
Sugar 3/4 cup
Pink lemonade concentrate 1 can (12oz)

Directions:
·  In a large saucepan over medium heat, bring water to a boil. Remove from heat, stir in sugar until dissolved.
·  Add tea bags, steep for 5 minutes or until desired strength.
·  emove tea bags and cool.

·  Add lemonade concentrate and enough additional water equal to 1 gallon total liquid


Jal Jeera
Ingredients:
Ice water 3 cups
Ground cumin 1 tbsp
Mint leave paste 1 tsp
Lemon juice 2 tbsp
Black salt (Kala Namak) 1/2 tsp
Sugar pinch

Optional Spices:

Cilantro (coriander) paste 1/2 tsp
Dry mango powder (amchur) 1/2 tsp
Directions:

Mix everything together and served chilled with ice and garnish with mint.

Kesari Pista Milk shake
Ingredients:

Pista( soak them in water for about 1 hour) 100 gms
Almond(soak them in water for 2 hours) 50
Saffron a pinch
Sugar 50 gms
Milk 3 cups

Directions:
·  Take a pan and heat the milk , let the 3 cups simmer in very low heat , let it simmer until the milk becomes 1 1/2 cup.
·  Grind the almonds , along with the pista , and the saffron until they form a smooth paste
·  Add the ground paste to the milk and then stir them well.
·  Let the milk come to a boil for about twice.
·  And remove them from the stove, and when the milk comes to room temprature.
·  Place them in the refrigrator. Serve them cold.


Lassi
Ingredients:

Plain Yoghurt 1/2 cup
Cold Water 1 1/4 cup
Ground roasted Cumin seed 1/2 tsp
Salt 1/4 tsp
Dried Mint 1/4 tsp

Directions:
·  Blend in a blender for 3 seconds. Lassi is one of the easiest things to make, and there are many ways of making it. Basically, it is buttermilk (yoghurt whisked with water), and you can choose almost any consistency that you like, from the thinnest to the thickest. ·  Serve cold


Low Fat Mango Drink
Ingredients:
Skimmed Milk 1 Cup
Unsweetened Mango Juice 1 Cup
Orange Juice 1/2 Cup
Honey 1 tbsp
Directions:
1. Transfer all contents into a blender and blend them till they turn smooth and creamy.
2. Add crushed ice and serve.

Mango Shake
Ingredients:
Mango 2
powdered sugar 8 tsp
Milk 4 cups
Ice crushed as required

Directions:
·  Add the contents into the blender and grind it well
·  Serve it cold

Masala chai
Ingredients:
Water 1 1/2 cups
Dried tea leaves (or tea powder) 2 tsp.
Whole milk 1 cup
Masala chai powder 1/2 tsp.
Sugar 2 tsp


For the masala :

Cinnamon 2 sticks
Ginger powder 1 tsp
Cloves 3-4 nos
Cardamoms 4-5 nos
Fennel (aniseed, saunf) 1/2 tsp
Peppercorn 1 no
Powder all the above ingredients & mix. Store in an airtight container

Directions:
·  Heat the milk for a minute.
·  Boil the water and the sugar.
·  Add the tea leaves and the masala powder.
·  When the concoction starts boiling, remove it from the fire.
·  Pour out the milk into a cup.
·  Place a strainer on the cup and pour about 1/3 cup of the tea concoction into the strainer.
·  Remove strainer and stir the tea well.

Masala Coffee
Ingredients:
Milk 3 cups
Water 3 cups
Cinnamon stick (1" long) 1
Cardamom pods 5
Sugar 6 tbsp
Coffee, regular grind 6 tbsp
Directions:
·  Combine water and milk in a saucepan and bring to a boil.
·  Add cinnamon, cardamom pods, sugar and coffee into boiling liquid in saucepan. Stir a few times and boil over medium heat 3 to 4 minutes. Make sure it does not boil over.
·  Strain coffee through cheesecloth into another pan.
·  Place coffee over heat and bring to a boil.·  Pour coffee between two pans until thick and creamy. Serve in cups immediately

Panna

Ingredients:
Raw Mangoes 2 Medium
Water(Chilled) 1litre
Pepper Powder 10 Gms
Mint Leaves 1 Spring
Rock Salt to taste
Green Chillies (deseeded) 2 small
Poppy seed paste 5 Gms
Chat masala (optional) 10 Gms

Directions:
·  Boil the raw mangoes over embers until the skin starts peeling away and the pulp is slightly cooked . Immediately mash the boiled mangoes in little chilled water.
·  Add rest of the water and pass the mixture through a sieve to mash the pulp evenly. Add the paste of the poppy seeds (soak the poppy seeds in the warm water before making a paste.)
·  Add the powdered pepper, chopped and deseeded green chillies and rock salt.Add chat masala if you wish to.Check for seasoning to chill.
·  Garnish with chopper mint leaves and desiccated coconut before serving.
·  Panna is good starter too and keep it for two days under refrigeration.


Punjabi Lassi
Ingredients:
Yogurt 500g
Cream 50g
Sugar 150g
Rose essence 3 drops
Ruafza 1 tsp
Ice cubes 100g
Directions:
·  Mix yogurt, ice cubes, sugar in a vessel and blend to a fine paste.
·  In a tall glass, add 1 tsp ruafza, the above yogurt mix, sprinkle rose essence and chill it.

Strawberry Yogurt
Ingredients

Yogurt ( Well set ) 500 gm
Strawberry Crush 1/2 cup
Milk 1/4 cup
Honey 2 tbsp
Custard Powder 1 tbsp
Sugar 2 tbsp


Fresh strawberries for garnishing

Directions
1. Prepare custard by adding milk, custard powder and sugar and cook while stirring continuously till the ingredients turn thick and creamy.
2. Cool it for some time.
3. Transfer the custard, honey, yogurt and strawberry crush into a blender and blend it into a fine paste.
4. Chill and serve with strawberry garnish.


Sweet lassi
Ingredients:

Yogurt 4 cups
Sugar 4 tbsp
Water 1 cup
Crushed ice 1 cup
Directions:
·  Mix all the ingredients and blend in a mixer for 40 to 50 seconds.
·  Yogurt from richer milk needs less time to form a good, thick froth.
·  Serve chilled.

Thandai
Ingredients:

Sweetened condensed milk 250 gms
Milk 1 1/2 litre
Almonds, soaked in water & peeled 10
Pepper corns 6
Cardamoms, crushed 4
Fennel seeds (saunf) 2 tsp
Khus essence (poppy seeds) 1 tsp
Ice cubes, crushed Few }

Directions:
·  Grind well the peeled almonds, cardamom and fennel seeds to a fine paste and mix with the rest of the ingredients. Strain the mixture well.
·  Take crushed ice cubes in a glass till half and fill the rest with the above mixture.
·  Serve garnished with rose petals.


Tomato Juice

Ingredients:

Tomato pieces 4 cups
Sugar 5 tsp
Lemon juice 1/2 tsp
Salt 2 tsp

Directions:
·  Pulp tomato pieces with sugar in a blender for 30 seconds.
·  Filter through a sieve and wash the retained pulp by pouring cold water over the sieve.
·  Do not return the pulp to mixer. Over pulping spoils the taste due to the seeds and the skin getting extracted.
·  Make up to 6 cups with cold water. Then add lemon juice, sugar and salt.
·  Garnish with mint leaves if desired and serve ice cold.
